The best news of all, is that after the holidays, you can still keep making and enjoying this recipe. Anyway you like it. The basic formula is listed below:

2 cups medium packed green leaves of _________________.

1/2 cup grated cheese of ________________.

4 cloves of garlic, peeled

1/3 to 1/2 cup olive oil

1 cup medium packed red vegetable of ________________.

Using a food processor, add in the four ingredients, one at a time. Give a whiz for each to form a natural pesto. Remove carefully from the food processor. Fold in the red chopped vegetable.

This recipe may be kept in the refrigerator for three days. Or it may be frozen for up to three months, in freezer zip-lock bags.

2 cups medium packed green leaves of ____rocket or arugula_____.

1/2 cup grated cheese of __white cheese or mild cheddar_____.
